Simple Summer Potato Salad

Ingredients
  • 2 (1 lb., 4 oz.) pkg. red potato wedges
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1 cup mayonnaise
  • 6 large hard boiled eggs, peeled
  • 1/2 Tbsp. Italian Herb Seasoning Blend
  • 1 Tbsp. Dijon Mustard (optional)
Instructions
  1. Place 1 cup water in Base of Oval Microwave Cooker; layer on package of potatoes i Shallow Colander; place second package in the Deep Colander. Cover and microwave on High for 8-10 mins. until potatoes are fork tender.
  2. Use Quick Chef with stainless steel blade to chop onion and celery first, then chop eggs; set aside in Thatsa Bowl Jr. Add cooled potatoes and remaining ingredients and gently fold together using a Saucy Silicone Spatula.
  3. Seal and refrigerate until serving time.
