Simple Summer Potato Salad

Ingredients

  • 2 (1lb 4oz) pkg - red potato wedges
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1 cup mayonnaise
  • 6 large hardboiled eggs, peeled
  • 1/2 Tbsp Italian Herb Seasoning Blend
  • 1 Tbsp Dijon Mustard (optional)

Directions

  • Cook potatoes in STACK COOKER or other microwave Tupperware container until fork tender - about 8-11 min on 70% power
  • Use QUICK CHEF with stainless steel blade to chop onion and celery first, then chop eggs; set aside in Fix-N-Mix Bowl.
  • Add cooled potatoes and remaining ingredients and gently fold together using a SILICONE SPATULA. Seal and refrigerate until serving time.
