Oatmeal Almond Blueberry Pancakes

Ingredients
  • 1 1/2 cup whole wheat flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • pinch salt
  • 1/2 cup quick-cooking oats
  • 2 eggs
  • 1 3/4 cup low fat buttermilk
  • 1 Tbsp. vanilla extract
  • 3/4 cup fresh or frozen blueberries
  • 2/3 cup sliced almonds
Instructions
  1. Mix the first 5 ingredients together in a Mix ‘N Store Plus Pitcher.
  2. Mix eggs, buttermilk and vanilla in Quick Shake Container and add to the Mix ‘N Store Plus Pitcher mixture and mix until well incorporated.
  3. Heat a Chef Series 11″/28 cm Fry Pan on medium heat. Once heated, put a little olive oil on a paper towel and wipe the Fry Pan. Let it heat 1 minute and pour about 1/3 cup of batter on the hot surface.
  4. Sprinkle in 6 blueberries and 1/2 Tbsp. sliced almonds on each pancake.
  5. Flip after about 2 minutes and cook for another minute or until golden brown. Transfer to plate and drizzle with syrup, or dust with confectioners sugar.
