Oatmeal Almond Blueberry Pancakes

Ingredients
- 1 1/2 cup whole wheat flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- pinch salt
- 1/2 cup quick-cooking oats
- 2 eggs
- 1 3/4 cup low fat buttermilk
- 1 Tbsp. vanilla extract
- 3/4 cup fresh or frozen blueberries
- 2/3 cup sliced almonds
Instructions
- Mix the first 5 ingredients together in a Mix ‘N Store Plus Pitcher.
- Mix eggs, buttermilk and vanilla in Quick Shake Container and add to the Mix ‘N Store Plus Pitcher mixture and mix until well incorporated.
- Heat a Chef Series 11″/28 cm Fry Pan on medium heat. Once heated, put a little olive oil on a paper towel and wipe the Fry Pan. Let it heat 1 minute and pour about 1/3 cup of batter on the hot surface.
- Sprinkle in 6 blueberries and 1/2 Tbsp. sliced almonds on each pancake.
- Flip after about 2 minutes and cook for another minute or until golden brown. Transfer to plate and drizzle with syrup, or dust with confectioners sugar.
