Goat Cheese Potato Mash

Ingredients

  • 2 russet potatoes, rinsed
  • 2 sweet potatoes, rinsed
  • ¾ cup water
  • 6 tbsp. unsalted butter, melted
  • ½ onion, chopped
  • 2 sprigs of rosemary, chopped
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • ¼ cup feta or goat cheese

Directions

  • Place potatoes in 3-qt. base of TupperWave® Stack Cooker and add water. Cover and cook on high power for 15 minutes. Let cool slightly and cut all potatoes in half.
  • Assemble Press Master Ricer Accessory and place potato half in chamber. Push down to rice. Repeat with all potatoes.
  • Add 5 tbsp. butter to potatoes and mix well. Reserve 1 tbsp.
  • Place remaining butter in saucepan and add onion to quickly brown. After about 5 minutes add rosemary to sauté.
  • Pour onion mixture in center of potatoes and mix until well combined. Add seasonings to taste and top with cheese just before serving.
